This is a freeze dried mixed blend culture containing Penicillium candidum and aromatic mesophilic culture. Penicillium candidum is essential in the ripening process of white surface mould cheeses such as Camembert and Brie and aromatic mesophilic culture creates the buttery flavour in the cheese.
Strains included in this culture are: Penicillium candidum, Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. lactis biovar diacetylactis, Leuconostoc.
Each pack contains 5 sachets. Each sachet cultures 4 liters of milk (2 Camembert). A pack of 5 sachets will make 10 Camembert. Stored in the freezer they will last for many months.
