Buy a bag of 12 heirloom perennial shallots. These shallots can be grown like garlic with multiplying bulbs forming each season around the parent bulb.
Each bulb produces 6-8 bulbs around it when planted. Plant slightly raised from the soil in late winter, early spring and harvest in late summer when the leaves start to dry off. Lift, dry for a few days then separate the bulbs and store, saving some for replanting the following winter.
Shallots have a lovely delicate flavor used widely instead of onions in French and Asian cuisine. This variety came to us from a local organic grower who has been growing them for many years.
